The quest continues with Sweet Potato Fries

Well, I went off dairy a week ago and even after 5 days there wasn't much difference in her rash. It was a little better but we were also using hydrocortisone cream and serious moisturisers on her so that it didn't get too awful. So 2 days ago, I went off wheat. And already it is looking better. I was hoping to not have to go off wheat since Miss 3 is back on wheat these days (although more on that in another post) but it looks like wheat might be the main culprit for Miss 0's reaction at the moment. So I have been seeking yummy lunches and here is one easy and delicious recipe that I'm enjoying this week that I got from Bill Granger's 'Every Day'.

Sweet Potato Fries (serves 1)
1/3-1/2 sweet potato (depends on its size and your appetite), peeled and cut into batons
a generous shake of paprika
a little shake of cayenne pepper (your preference as to how much heat you want really)
salt (again, to taste)
a couple of tablespoons olive oil
ready to go in the oven

Preheat oven to 230C. Toss the batons in all the other ingredients. Place on a baking tray in a single layer and bake, stirring occasionally, for 30min or until golden brown. Bill recommends serving with lime wedges (which I am trying today and it is great!). I used to like them with mayonaise but that's out at the moment...
I'm no food stylist and I have a new baby so you are just going to have to cope with these pics - they were super yummy and filling though and that's what counts :)
PS - sweet potatoes are also known as kumara and yam depending where you live

  1. For our little girl we simply cut the pealed sweet potatoe in disks and baked them on a tray with little olive oil, turning them once.

    1. Her skin is so much better now Julie - not 100% but it's such a relief to see her beautiful smooth skin back. I might have to go totally gluten free if the rest doesn't clear but I'm holding off for a little longer to see if she continues to improve.

    There is a dairy & egg free mayo...made from soy,just wondering if you have tried it?
    Just recently got my mr.11mths tested for dairy because wanted to wean him off breastfeeding once he turns 1yr. And yes his is allergic to dairy, some treenuts, eggs & shellfish.
    Gave him @ 6mths NAN Ha formula milk & he came out with hives all over his body..ever since then I've been cautious with dairy.
    While I'm still breastfeeding I've been able to eat whatever he can't with him with no reaction just a few eczema under the chin & side of cheeks but will try out what you have done by taking out dairy, eggs, treenuts & shellfish while I'm still breastfeeding.
    How long did you see if come to effect on your Miss 0?

    1. Thanks for your comment jroxas :) I think I've seen the mayo but not tried it. I did miss mayo the other day when I made BLT (on rice cakes - not quite the same as a fresh bread roll....).
      Sorry to hear about your boy's allergies - nice to get them confirmed but not nice to have to deal with.
      Miss 0's (I could call her Miss 3months now!) skin cleared up within a few days. I have read that the dairy protein can hang around for up to a couple of weeks but I definitely see an improvement in her skin much quicker than that. I chatted with our allergy specialist the other day about my diet and he said I shouldn't cut anything out unless it definitely makes an obvious reaction (until we get her tested and know what to actually take out). He was mostly concerned with my health and nutrition. So I'm going to go back on dairy again to see how she reacts again - he said I should challenge them at least twice to confirm my suspicions in case she just happened to have some eczema at the time. It was good that you could eat those things while he has been feeding but I suppose it's worth cutting out now you know he has those allergies. Hope it makes his skin better. It's amazing when you get those gorgeous smooth cheeks!
